I hope you enjoy a quick story ... it’s kind of relevant I promise. My partners granny owns a bee farm. And it has been a pleasure over the years both seeing and tasting the differences between honeys created by the same hive when local farms change their crop... even the differences between hives that prefer certain plants... Reader beware... herein lies honey.

Nose Jasmine and lavender honey with sweet, sweet ripe pear. So ripe in fact that the flesh has gone grainy. Fresh vanilla pods round off a very sweet but pleasant nose.

Palate That wonderfully sweet pear sits on a bed of custard now as the vanilla scent develops. Honey comes to the fore again but the jasmine and lavender have dissappeared, now the honey’s more biscuity, maybe rape seed .. alongside clover, heather and wildflower.

Finish The finish is all honey, and tastebud tingling wood spice. Not alot here but the finish is medium in length and sweet.

In conclusion I have to say I really enjoy this whisky. That isn’t me suggesting it’s a particularly great dram. But it’s a sweet and approachable friend and becomes even more approachable after a long day spent out in the cold. It’s both warming and gentle.
