The Cascade Hollow Distillery – producer of the George Dickel bourbon – is the only other distillery (Jack Daniel’s being the first) that uses the so-called Lincoln County Process. This is the filtering of the spirit through the charcoal of the sugar maple before putting it to sleep in a cask. So this too can be called a Tennessee Whiskey. This 9 years old is a bottling from 2018 from a single barrel – or as it says on the label ‘Hand Selected Barrel’. It is my very first George Dickel (if you make abstraction of the ’secret Tennessee’ whiskey that I tried before from North Star Spirits, The Whisky Mercenary and MMM Mark & Manny’s Malts :-)).

Wonderfully layered nose on mango, cherries, baked pears and sniffing tobacco. Then almonds kick in, alongside some spices. Think nutmeg, cinnamon and chili pepper. This is very good!

The body is just fine: creamy and mouth coating. Italian coffee with almond shavings, baked pears sprinkled with cinnamon and caramel, rum-raisins and corn on the barbecue.

Wonderfully long finish on gingerbread, caramel and almonds, spicy until the death.

Ah, very good and available for only 40 EUR. That’s a bargain. Ideal for an Old Fashioned, trust me.
