The Stillman's Collection, available only at the distillery, contains 3 bottles of 5cl: new distillate, 1 Year Old matured on a bourbon cask and 2 Year Old matured on an oloroso sherry cask. I'm trying from full bottles of this stuff that could be found in the Blender's Room at the distillery. This sample matured for one year on a bourbon cask. The ABV went down from 63,5% to 62,8%.
The nose already reveals a very creamy, almost buttery, character. While pear is still prominently present on the nose, it's already outfoxed by vanilla and some light citrussy notes (lime?).
It's also pretty creamy on the palate, but the influence of the cask is too limited to really develop the flavour any further at this point. On the contrary, the new make tastes better than this young and rough creature that has not yet decided which way to go. Understandble, in any case.
The finish is medium in lenght and pretty fruity, which makes up for the underdeveloped taste.
Triple distillation makes for a very soft and cleane spirit, making it subject to faster maturation. But there is little evidence of this after only 12 months in the cask.
