Bakery Hill released their Classic Malt also at cask strength. This bottling has an ABV of no less than 60,5%, so I had best keep some water at hand.

The nose starts rather closed and needs some time to reveal its secrets. It has clear hints of citrus and something grassy, but also a slight tropical side in the background. But the main aroma is praline. However. That doesn’t seem to last long. The citrus soon takes control. After a few moments, it reminds me quite a bit of juniper berries. Only then does the toffee shine through, making it suddenly sweet. Water adds a floral element like dried flowers.

It is very oily. And the spices explode on the palate. All kinds of spices from the oak cask, ginger and pepper in the lead. It does burn a little, undoubtedly due to the high ABV. Let me add some water. That brings out the grasses, but also allows some tropical fruit to speak. Good.

The finish is long and spices and lemon.

Nice dram from Down Under that can take quite a bit of water. Thanks to Niek & Ilse who brought me a miniature.
