Went down to the Lark last night for another session, tried four different Lark expressions. The final one was the LD95 Cask Strength - bottled at 58%.

The nose is smooth, sweet and rich. Hints of caramel, oak and malt with a gentle suggestion of spice. With some water it expands and thickens, adding orange, cherries and pears like a good slightly spiced christmas cake. Really complex - I could keep sniffing this for a long time.

The taste is gorgeous. Honey, caramel, oak, orange, light spice (like a subtle pepper sauce on steak), and a hint of salt. Truly a wonderful rich and thick dram.

The finish is long and hot, with light spices fading to honey and oak notes.

This was my favourite of the four I tried. A fantastic malt. It's only a hair short of 9.5 stars (the highest rating I've given for any dram.

Well worth checking out. Bill Lark is becoming known as the 'Grandfather' of the Australian Whisky industry, and I heard a rumour he was invited over to Scotland to help set up a small boutique style distillery over there.
