A Macallan as a Macallan ought to be: fully matured on sherry, in this case a Pedro Ximenez cask. If I am not mistaken, this 21 Year Old Macallan was bottled by David Stirk for the Dutch market, under his Exclusive Casks banner. It has a fantastic dark color from the sherry cask.

Great expressive nose on all that you can associate with sherry and more. Raisins, apricots, peach, banana, brown sugar and a tiny bit of espresso. Quite creamy. Very nice and round. This reminds me of a good Glenfarclas, in fact. Hints of toasted oak in the background. This offers cloves and cinnamon, but also a touch of liquorice. Wonderful.

It is silky soft on the palate, wonderfully sweet on peach and apricots. The same spices as on the nose, but more outspoken. Goes down like lemonade. Well, sort of. Very quaffable and needs absolutely no water.

The spices make your throat very warm in the lingering finish that dies on a big burst of sweetness.

Lovely whisky indeed, mostly thanks to an active PX cask that offers a perfect balance. As good as gone, though.
