I haven't tried Wild Turkey 81. Wild Turkey says it has a deeper charring (#4) than their WT80, and 0.5% additional ABV (40.5%). They also say it is specifically designed to give more flavour in cocktails than their standard 80 proof. Most sippers rather than cocktail mixers are going to want the Wild Turkey 101, Rare Breed, and products more to the top shelf on their product list, I would think.

I've also been told that WT81 will have a higher rye content (similar to 101) & that it will be a blend of 4, 6, & 8 year old casks, while the remaining stocks of WT80 are typically only 4 to 6 year old blends. The sample I had was quite good - good rye characteristics that I distinctly remembered from when I bought a bottle of WT Rye over the summer!
