This is only my second encounter with this young distillery from London and the first one was very pleasant. This Oloroso cask was one of the highlights in my online tasting ‘New Kids on the Block’ and below you can find out why. The nose is very perfume-y at first. After some air that translates into lots of wood, but also sweet notes of stewed strawberry and roasted almonds. And while it cannot hide its young age (it has a sharp edge), this is already a lovely malt on the nose. Impressive considering the fact that it’s younger than four years in any case. Nicely creamy on the palate and immediately very sweet, but with some spices. Think cardamom and cloves. I also get some rye bread and raisins. The strength is fine and does not need any water. The finish is it’s trump card. Nicely spicy and hence warming, lingers long and leaves you with a dry but wonderfully sweetened mouth. Bimber enjoys a bit of a hype, it seems, which to me is usually reason to be skeptical. But after trying this one, I cannot but admit that they are doing a very good job down there in London.
