It was only in 2016 that the first cask at Bimber – just outside London – was filled. The Belgian whisky shop Top Malts hurried to bottle a cask especially for them as 'The Belgium Edition'. It was bottled from a single bourbon cask at cask strength, a whopping 58%. Inviting, sweet nose on a cartload of vanilla, petit beurre biscuits, pears, milk chocolate and caramelised wood. A little sweet on marshmallows, with a soft spicy edge like black pepper. A single drop of lime juice in the background. This makes me happy. Great body. Sticks to the teeth. Vanilla and grain cookies come first, followed by guimauve (hooray!), marshmallows, lime juice and eucalyptus. Quite spicy now with pepper and ginger. Licorice kicks in, while something of cotton candy develops. Did I mention that this makes me happy? And then some. Sturdy fellow, though. Cozy long and spicy finish, but at the end the mouth turns completely dry. That's no problem at all. The best I have already tasted from this distillery (note to self: don't fret, silly, it's only your third whisky from this distillery). Great selection by Top Malts, because this is a top malt.
