Bimber is a brand new distillery in… London! They only got under steam in 2016 and end of last year they launched their first Single Malt London Whisky, a release of 5.000 bottles, whisky matured on re-charred oak casks, char level #4 on a scale of 5.
The nose prickles and shows quite a bit of oak in the guise of wood shavings and furniture polish. Then a big candy-like note hits you on top of some pineapple on the barbecue, baked pears and candied syrup. Black pepper, thyme and cinnamon. Toasted and caramelized wood. Apples in a frying pan with an overdose of baking butter. It takes some getting used to.
Nicely oily, but immediately piquant on pepper, cloves and cinnamon. The thyme becomes quite big and give it quite a green hit. Add some eucalyptus. Some burnt sugar in – again – an overdose of butter. Oranges in the distance as well as some rye bread. Gingerbread.
The finish is long in which the woodspice continue to prickle and candied orange peel has the final word.
Very young whisky with some extremes. Not bad at all, but a little over the top on wood, in my book. Hence it leaves the mouth parched.
