Cambus 23 Year Old 1991 Signatory

While the Cambus single grain distillery closed in 1993 already, the warehouses and the filling station are still in use. There are no official bottlings and even with the independent bottlers Cambus is few and far between. Signatory, however, has been releasing one single cask every year since 2009 in their Cask Strength Collection. They are all from 1991. The newest one is this 23 Year Old, bottled on 19th January 2015. It is only my third Cambus.

This single grain is less sweet than expected. It is firstly malty and even yeasty. Underneath you will find some mint and some white fruit. There is even a mildly sour edge, which I find hard to identify. Lemon juice? Cheese cake? Yoghurt? Atypical nose for a single grain, I would say, but interesting.

The arrival is rather soft and mildly spicy. Not a lot of body, but nevertheless quite tasty. More fruity than the nose promised with clear hints of apples, pears and oranges. Must be the sherry cask speaking, for I also get hints of pineapple and some bubblegum. Liquorice. Again a bit strange for a grain whisky, but again quite interesting.

The finish is somewhat long, but also a tad bitter. It leaves the mouth dry.
