Only just a few weeks ago I tried the first batch of this Chaos, a malt from Caol Ila composed from two PX hogshead that were put to sleep in 2010 and a refill hogshead from 2009. For this second batch, however, Iain Croucher vatted to oloroso butts and one refill hogshead that was finished on oloroso. I wonder how different they will be. A little OMG moment overcomes me when I put my nose in the glass. Nicely sweet and umami at the same time with smoked bacon, dates, lime, wet rocks, soy sauce and a smoldering BBQ with a sea breeze. Top nose! Nicely oily and immediately smoky and sweet. Lots of charred wood, sugared lime peel, soot, bacon on the BBQ, stock fish, olives and a good dollop of brackish water. Beef jerky with strawberries, I kid you know. Very good! The finish is more of the same, sweet versus salty with an umami trait and smoke that lingers. At the death I get some chewing tobacco and a pinch of sea salt. And tot think you can get this stuff for only 50 EUR. Recommended! Thank you, Tom V, for the generous sample.
