A new Belgian bottler has risen: IN2Spirit. Behind the initiative are Steven Demarez & Tijs Denuwelare, two people from West Flanders. And it has to be said: it is daring to start a new company in these circumstances. And it can also be said: the packaging is spot on. Beautiful. And now let's hope that the contents of the bottle are good as well. However, I do not yet have much experience with Dalmunach, the young distillery that was built on the site of the defunct Imperial. Nice color thanks to the PX Quarter Cask. Let's get started!
The nose is already very inviting. Chocolate with praline filling, Café Noir cookies, croissants fresh from the oven, marzipan and raisins. Popcorn, hazelnuts and a touch of caramel. Nice!
Great body. Nicely oily and sweet. Now more raisins, plums and some grapefruit, but the hazelnuts and walnuts follow. Then some orange liqueur, cloves and licorice. Honey, salted caramel and a hint of chewing tobacco. And it needs absolutely no water. In fact, it is dangerously quaffable.
The finish is medium-long, nice, dark and sweet and warm with some candied orange peels on the deathbed. Very good!
Well, that's what they call 'making an entrance'. Bold, but very successful cask selection. Congratulations guys! What a start!
