Meringue & Marshmallow
Dunville's is a whiskey brand that already saw the light of day in 1808. It was originally distilled by Royal Irish Distillers in Belfast, but they stopped in 1936. Founded in 2013, the Echlinville Distillery wants to breathe new life into Dunville's and launched this single cask – with a Madeira finish – of a 19-year-old Irish malt in 2021. Until they themselves have sufficiently long-aged whiskey, they use casks that they have purchased elsewhere. This is a good example of that.
Very aromatic and rich nose on orange liqueur, popcorn, hazelnuts and walnuts, toffee and potpourri. Café Frappé on a terrace in Paris. The Madeira translates into a sweet waxiness that reminds me a bit of meringue and marshmallow. As it can breathe a bit, it becomes easier to identify the fruit. I now get pineapple, kiwi and lime. Just do a sorbet of the latter. Delicious, though.
Great body. Immediately spicy with cinnamon, cloves and licorice. The fruit now translates to peach, mango, pineapple, bitter oranges and dried apricots. But all together in a stew. Let it simmer, while you sprinkle some wood herbs over it.
The finish is nice and long, warm and remains sweet and fruity until the deathbed. The herbs continue to reverberate for a very long time.
Delicious malt that has benefited greatly from the Madeira cask. You fork over 300 EUR for this, though.
