Anyone who knows me a little knows that I have a weakness for new make. And so I don't miss any opportunity to taste it. With that of the Israeli Milk & Honey Distillery, this is not my first rodeo. It's already the fourth new make I'm putting on the lips, but this is their most recent.

Fresh nose on malt sugars, honey and something that reminds me of guimauve. That's a first! Very clean, again. Very accessible.

Because this version is at 40%, it comes in very smoothly. Slightly creamy and sweet with a spicy edge. Even slightly salty and floral. Less fruity than the previous version, but no less interesting.

However, the finish is a bit on the short side this time. Does that bother? No.

He seems to be getting better and better, that new make from Tel Aviv, and of course we can only applaud that. Incidentally, it is the 20th meeting with this distillery and I have become a big fan in the meantime.
