Intro: Eagle Rare 17 yr old Bourbon is one of the five bottlings in the Sazerac Antiquities Collection, together with George T. Stagg Bourbon, William Larue Weller Bourbon, Sazerac 18 yr old Rye, and Thomas H. Handy Sazerac Rye.
Nose: the wood is obvious immediately, and features a lot of caramel and vanilla. There is a fine trace of honey and floral scent as well.
Taste: Wood, wood, and more wood! This is one of the woodiest bourbons I have encountered. The difference in wood here between this 17 yo version and the Eagle Rare 10 yo is maybe even larger than you might expect. The rye 'flavouring grain' flavours are there, but they take a back seat to the wood. This has a very nice sweet/dry balance. Viscosity is fairly thick.
Finish: This sits well on the tongue and give a rather long and quite pleasant finish.
Balance: Liking this one, or prefering it to others, would largely be about how much you like to drink a lot of oak. This is not my personal favourite taste profile, but it is quite good and very much recommended for those "oakies" among you out there.
Postscript, after this bottle is long gone. With a lot of air time this bottle became better and better, and seemed less proportionally woody. For most of this bottle's open time I would have rated it at 92 pts.
