Recently my friend Jeroen from The Bonding Dram celebrated his birthday and invited some friends for a tasting. One of the malts that was given to me was this 'secret' Highland Park that was bottled by The Nectar of the Daily Drams in 2020. Will you look at that color...? Dried figs, baked apples, lots of raisins and dark honey. Everything you can expect from a super active sherry cask – and all very tasty too! – but there is little to discover of the DNA of this Highland Park. But if the nose is as good as this, you won't hear me complain. On the palate, that continues. Mocha, baked apples, plum juice and hazelnuts, complemented by a panoply of wood spices, including some black pepper. Powerful, round, sweet, grand. Just a hint of smoke. A liquid candy. The finish is particularly long on all kinds of sweet sherry notes with a delicate smokiness. It dies a slightly bitter death. Well, this might as well have been a sherry that matured in an HP cask. But like I said, you won't hear me complain. Delicious! Thanks, Jeroen!
