Former releases by BYOB-C (say ‘biopsy’) were all very good in my opinion. Not much later there was a series om malts under the ‘Build Your Own Bearded Commando’ label, but the acronym can also be used for ‘Build Your Own British Classic’. Isn’t that just wonderful? And again with this great retro label. This time a Defender. Their first British Classic is an Orkney malt. That needs no further explanation. For those not yet awake: it ain’t no Scapa.

A soft smokiness – typical Orkney peat – arrives in my nostrils and is the prelude to a beautiful fruitiness on Seville oranges, peach and apricots. Almonds and heather kick in quickly, before a maritime note joins the fray. Delicious.

Silky soft, round, rich and at perfect strength. The salty edge and smoke come first, with lots of earthy notes. Then the fruit appears in the guise of dried apricots, overripe oranges and pineapple in the BBQ. This is irresistible.

The finish is spicy, long, warm and very tasty.

A grand HP! Only 98 bottles at 95 EUR each. You’ll have to hurry.
