@MCM Old Potrero is so delicious! And glad you enjoyed the whisky review, that whisky was easily worth all the work that went into sourcing the bottles. I also am very curious to see what other people's unicorns are.
I'd say my new unicorn is the Pappy Van Winkle 20 year old, however I've been invited to a tasting where I'll be able to try a bottle of it so I just might catch this unicorn quickly!

First unicorn was a Caol Ila 18; impossible to find online but the nearest liquor shop happened to have two bottles:) Then I saw something about Amrut 100 on the Amrut website and after reading some reviews about it I just neeeeded it. Luckily for me there was this small webshop who had one of the 500 bottles, so the quest wasn't a fearytale, but within two days it turned into a tasty 3D reality show right in front of my nose :) Once I had the chance to order a bottle of 2012 George T Stagg from Belgium, but I didnt... I still kick myself in the balls for that miss, so thats my new Unicorn Oh and I would like to thoroughly sip an Octomore at least once too

@MCM what a great way to present the question!
You've made me think a fair bit about what it is for me. I've decided I don't find myself chasing unicorns, but rather there are many out there I consider "Elusive Butterflies" (with apologies to Bob Lind, 1966).
My wife started a whisky bucket list. I thought it such a great idea that I copied it for myself. We track the Scottish distilleries whose whiskies we've tried and the ones we have yet to taste. So far I've been lucky enough to sample whiskies from 84 distilleries. The number left to try is elusive because some "silent stills" are so rare (therefore hard to find and terribly expensive) and others--a growing number--are so new they haven't released a "whisky" yet.
I'm not interested in just checking boxes off a bucket list, though. I seek out drams that have achieved a status of being very good and somewhat representative of the distillery style (if there truly is such a thing).
If there are unicorns on my bucket list I guess they'd be Convalmore, Daftmill (it will be still some time before they release their first whisky), Ladyburn, and Rosebank.

@MCM, see also the Discussion "Epic Whisky Missions" for a similar discussion.
The closest thing to a whisky unicorn for me right now would be my second bottle of Octomore Orpheus 2.2 for no more than $ 250.

I guess I have two: Talisker 57N and Connemara Turf Mor. They're both amped-up versions of OBs that I've found quite good but not thrilling, so I hope the additional "ampage" will make them special.
And from what I can tell, each of them are generally unavailable in the US, which is what really makes them unicorns for me. I'm planning a trip to Northern Ireland this summer, and these are the two bottles I'm most hoping to find while I'm there (or traveling).

Still working on getting van winkle 15, stagg and eagle rare 17yo as they are one hella hard to score a bottle of in Louisiana. In due time though I will catch that unicorn :)

My unicorn I would say is late 80s/early 90s Lagavulin 16 with the gold lettering. I've heard time and time again that while today's Laga 16 is wonderful the older ones are something truly special.

Up until recently my unicorn would have been Johnnie Walker Blue but having tried that recently (and thoroughly enjoyed it!) I'm looking for a new unicorn. Perhaps a Macallan 30yo sherry oak?

Ardbeg Provenance... I spent almost 2 months looking for bottles for sale, watching them disappear as I was saving up, until I finally had the money and took the plunge. And here it is in front of me now! Now I'll just have to forget that I own it for about 30 years...

@MCM Yeah what @Victor said more Orphesus, and some more of the Mackinlay's Shackleton and McCarthy's Oregon would be two previously caught Unicorns and wish to catch them again. :)

@PMessinger oh wow I'm surprised you can't get McCarthys I'm pretty sure we still get it in Louisiana which is unusual for us to get stuff other people can't get.

Old Grand Dad BIB from the 80's- had some at a tasting and it was very nice. Would like to find a bottle sitting on a shelf in the wild.

The obvious one for me is Glenmorangie Sonnalta. About 3 years ago, a string of its reviews came out here, and it became a tippity-top rated malt on Connosr. But almost another year passed before I really used this site (at first as a non-member) and before I really knew my preferences enough to guess I could really like this one. By then (start 2012) it was too late-- Sonnalta was not in shops, and it had more than doubled in price online (today it has doubled again!). For some reason I couldn't get it out of my head though-- I guess that's how all "unicorns" are, to those of us who have these stories!
The happy ending came a full 1&1/2 years later. By chance, I found it listed on the website of a shop maybe 200km away, at original price. I'd found the shop via wine-searcher.com while looking for a different bottle; but somehow wine-searcher did not register Sonnalta at that same shop. I called to confirm and got my order the next day. Yeah, that was a good feeling.

@Nolinske Yes it's hard to believe but both McCarthy's and Octomore are not allowed in Michigan. Someday I hope, but for now that's what Binny's is for. :)

I was just reading a review of Kavalan Solist Vinho by @SquidgyAsh. In it he described his journey to obtain a bottle and the conclusion of the quest when he finally caught his unicorn.
My new unicorn (being a Murray disciple) would have to be a bottle of the Ealanta.
Anyway, it was a cool story and I am interested in your personal unicorn stories. (Caught or still on the hunt.)
