Etienne Bouillon recently made the news by intalling to Caperdonich stills in his Belgian Owl distillery near Grace-Hollogne. The are operational as I write this and Etienne launched a plan to sell the first 200 casks from these stills to private investers, aptly named 200 Private Angels. We try the ‘old’ Belgian Owl spirit, cut to 46% and available from the distillery in 200ml bottles. It is, of course, crystal clear.

The nose is very fragrant. It has a dirty edge (which sounds bad, but smell good) of sneakers and mushrooms (not to be confused with OBE, which is quite impossible, obviously). A lot of hay. Pear drops. Cardboard. Wet earth. Not totally unpleasant.

It is a lot more fresh and fruity on the palate. Mostly white fruit with pears in particular as main taste. Fiery and very pleasant, for a spirit at least.

The finish is short and sweet with a hint of cooked vegetables.

I have a soft spot for new make as some may know. And this one is right up my alley. This is spirit with a future, although I must confess I am also very curious to the new spirit from the Caper stills. And if that is not a hint, Etienne, then I do not know what is.
