I have had the pleasure of hanging out with the sympathetic Thompson brothers on a few occasions. Simon and Philip not only run the upstart Dornoch Distillery (that reminds me I still have their first 10 gin bottles) which they built with crowdfunding. They are also quite apt at bottlings lovely single casks. This is one of those: a Bunna 28 years old, distilled in 1989 and bottled two years ago.

Lovely fruity nose on all kinds of white and yellow fruit. Think apples, pears, pineapple, mango and the whole is drenched in flowery honey. A pinch of kitchen salt. No peat whatsoever. But there is more. It has something dusty, as if I’m nosing this in the attic in and old Chesterfield, while perusing some 1960 books. Very nice.

On the palate as well, it’s all white and yellow fruit, but now some melons and lime kick in and the salty edge is a lot bigger. Salted caramel?

In the finish, sweet and salt keep going head to head, while a touch of oak takes care of a drying element.

A delicate Bunna with a salty kick. I’m a fan. Was around 200 EUR, which is very fair. Thanks, Marcel!
