The boys from Flanders' Finest Cask Selection selected this young Caol Ila during their latest trip to Signatory. I was able to taste it on the day of release and decided on the spot to take two bottles home. Why? Read on. It is a classic Caol Ila on the nose, but with an extra sweet twist. Seaweeds, stock fish and the surf of a wild sea against moss covered rocks goes hand-in-glove with young apples and mandarins, loads of vanilla and a touch of honey. Hints of grass. The extra sweet twist reminds me a bit of sugar candy, slowly progressing towards espresso. A bit candy-like. I like it! It is very clean in the mouth. Lime juice, toffee, liquorice, ashes, ginger, cappuccino… what is going on here? Very funny and very tasty. Pepper takes care of some punch, while the smoke increases all the time. Lovely, fairly long finish, in which salt and sweet seems to be in agreement to finish together. In the meantime, the smokiness lingers. What did you say? 65 EUR for a bottle? Seriously? I’ll take two!
