This sounds like it needs to appeal to a general-ish audience. Go with at least some stuff that people will recognize and feel satisfied with given their expense for this "gala." Maybe JW Blue to open things up, for example. (Yes, I know you said "single malt.") Macallan 18 for dessert.
If that leaves you a couple courses with open whisky slots, take whatever advice you can get on nice pairings. ...This is me saying that I have no idea what pairs well with poached beetroot. :)
And if anywhere along the way you have an opportunity to use a bottle with an impressively old vintage date, go with that. People love having a 1977 Whatever.

I always enjoy something smoky for dessert. Favourably paired with sweet icecream or in this case cheese, works like a charm!

I am on the planning committee for a gala fundraising dinner to be held in April. Dinner will be five courses, with a single malt whisky served with each course.
My job is to select the whiskies to be served... I have already selected & purchased one whisky (Ardbeg Uigeadail). Hoping to glean some suggestions from fellow connosr members.
Menu is as follows: Roasted Tomato & Fennel Veloute
Haggis with Corn Griddle Cake and Turnip Fricasse
Poached Beetroot, Frisse, Crumbled Aged Cheddar with a Fig & Balsamic Glaze
Overnight Braised Short Ribs, Maple Glazed Root Vegetables, Rumbled THumps - Rosemary Jus
Scotch whisky and Oat Cheese with Blueberry Compote
I believe I will match the Uigeadail with the haggis. Seeking the wisdom of others on single malt suggestions for the other courses.
