Apex means peak or pinnacle, with which Milk & Honey’s Master Distiller Tomer Goren wants to point out that this is up there with the best of what he has created so far. There are four expressions at this point: Cognac, Rum, White Wine and Pomegranate Wine. Thanks to Tom from Buds & Barrels I was able to get hold of two of them. I gladly start with the Cognac Cask with is basically their Classic with a finish on cask from a small but not-named cognac house.
Wow, this is good! Nice notes of apple sauce, pastry, cocoa powder and chocolate, upholstered with apricots and peaches. A touch of cinnamon and cloves, as well as some aniseed and acacia honey. Off to a good start.
The mouthfeel is fine. Almost syrupy in fact. Powerful, though. The spices kick in first: cinnamon, cloves, chili pepper and mint. That both red and yellow fruit and a truckload of apples arrive. A nice dessert whisky.
The finish is very long, offers more baked apples and some mildly burnt butter.
This is an impressive whisky. On a completely different level of what I’ve tried before from M&H. Around 95 EUR. Thanks to Buds & Barrels for the sample.
