For the Apex White Wine Tomer Goren, the Master Distiller at the Milk & Honey Distillery from Tel Aviv got to work with casks that previously held Israeli Chardonnay.

The nose is quite different. I’m being polite. In fact, it stinks a bit. Some fruit appears in the guise of apricots and peach with a hint of banana as well as some white chocolate. But at the same time I get wilted flowers, vase water and mud and something that reminds me of the crust of cheese. Nut my cuppa.

The body is fine. The banana is replaced by citrus on the palate, while the apricot turns candied. But again I get mud and other notes that make me frown. Could it be the Israeli wine that is totally not my thing? I’m having a hard time enjoying this.

In the finish the off-notes make room for bright stone fruit and spices from the oak, but the damage is done.

It’s most likely me, but I did not understand this whisky at all and did not like it. So be it. Around 95 EUR. Thanks to Buds & Barrels for the sample.
