I just came across this very interesting article about paxarette and its use in pre 90's Scotch.

Two things that got my attention were: I hadn't realised 'pax' was an actual beverage in its own right -assuming it to be purely additive based. Granted, it doesn't sound great to drink, but still interesting nonetheless. And second, the question that arises from this discovery is, well, 'can casks that held pax be used for maturing Scotch?'

Given the array of cask types used currently, it seems like a damn good question to ask. And I would be very interested in the SWA's response ...

@RianC I thought the practice of using it in scotch was banned around 1990.

@MRick - Yes it was (see article). The big question though is, if they can use modern sherry casks, which often have a 'kind of sherry' sloshed around in them (or squeezed into them under pressure) prior to filling, why not paxarette?

Same goes for wine, rum or anything else that was previously in a cask.

Had it been purely classed as an additive, that would be fine, but given it's a drink on its own merits, just like rum or wine etc, why does the ban still stand? Seems a tad hypocritical to me and people were clearly happy with the results of pax use, so it seems an odd one to single out?

@RianC i suppose the use of “wet” casks serves somewhat the same purpose as pax. Pax is a concentrate, though.

@MRick - I know but going off the article it states that it is barrelled in a solera style for separate consumption. So concentrate or not, I just don't see the difference?

Granted, what they used in practice was probably not the solera stuff but, given what they use under the name of 'sherry' these days, I think there's a big argument for its inclusion also.

I would be genuinely interested in the SWA's reasoning ...

I would have no problem with a pax revival. Maybe those famous pre-90 Macallans could be recreated at bargain prices, of course, for us poor whisky wretches.
