Cask 011 was bottled especially for the Belgian market on 21 september 2010. The bourbon cask on which it matured was filled with spirit on 14 November 2001 and then re-casked to a rum cask on 25 April 2006. This can hardly be called a finish. Hence Laddie speaks of Additional Cask Evolution (hey, that too is ACE). The label also proudly states that the cask matured in Warehouse No 02 on rack L24. There you go. Bottle 18 of 242 is sitting on my desk.
The nose is very soft and sweet with a big dose of vanilla and even butterscotch. Floral elements as well. Buttercups and dried grasses. The rum translates into wine gums and grapefruit. I cannot shake the feeling that is shows traces of peat. Light but pleasant nose. Water gives it an extra dimension of stable scents, which I find to be very attractive in this case.
It is as sharp as a Ninja sword and very salty (something I did not have on the nose). Needs water! That makes him slick and sweet. The rum is loud now. Apple, plum, citrus and a soft smoky streak.
The finish is long and sweet, with a bitter lining at the end. In the finish as well, a nice smokiness develops.
I am not a big fan of all those finishes and extra maturations, but when it is done well, we should say so. It is done very well in this case.
