Accelerated aging of Spirits

There is an article in the April edition of The Smithsonian Magazine about a process to age spirits in 6 days. I don't know how many here have access to the article but the company is called Lost Spirits Distillery. They also have been cloning spirits from the 1800's. This company has already won awards for their instant aged spirits.

We need to be clear about nomenclature. Any spirit that is allowed to mature for any time at all is aged. Even 6 days.

The issue to those who appreciate good spirits is quality of maturation.

Turv Exloo is probably an example of an attempt at rapid maturation with unfortunate results.

In contrast, Flor de Cana rum is know for it's "slow-aging". Again, what does that mean? Is it in a time bubble that makes it take 2 years to age a year?

Plenty of whiskies win awards. Heck, I have awards on my blog. That doesn’t really mean anything. If these “rapidly-aged” spirits are any good, they’ll find a niche market. If they aren’t, they won’t.

Six days! That's nothing. Back in my university days we aged goodness knows what for about 2 hours. Had the party and no one ever complained. Of course, all who came to the party weren't fussy.
