We will have to be patient until October 2017 to taste the first single malt from this new English distillery, but their spirit was already presented at the whisky festival in Belgium. I tried their 1 year old at cask strength, drawn from a red wine cask. The nose is sweet and sour on red fruit on the one hand (mostly raspberries) and baby breath on the other. I also get some apples, caramel and an umami touch, like roast beef. Cinnamon and candied ginger are present too. All in all a pleasant enough nose, but not whisky yet (doh!). Adding water makes it somewhat candy-like, reminiscent of Jelly Beans. The mouth feel is good, wonderfully creaming and coating. It is quite accessible without water, provided you take careful sips. Very new make-y (obviously), but already with quite some fruitiness and spiciness. The red wine cask has put its foot down. Diluted it is a bit off: sweeter on the nose, but more sour on the palate. The finish is a bit sharp and medium long. It cannot hide its young age – which it should not anyway, so no harm done. This is already starting to become tasty, but I am a bit worried about the cask. It seems quite active and I am not convinced that the spirit will last another two years without becoming totally overpowered. Their Dry Gin – which keeps them financially in the game – recently won a gold medal at the San Fransisco World Spirits Competition 2016.
