There are a couple of threads on this subject so I'll only touch on a couple things quickly.. If you like real ale then there is a brewery on Islay that does a good job that you may want to visit.. www.islayales.com you can also buy it at a lot of hotels and restaurants
if the islands history is of interest then Finlaggan may be worth a visit.. there is an ipod tour available here
open.edu/openlearn/history-the-arts/…
and in the same catagory.. there is also the Kildalton Cross to see.
if you are a hiker there are a number of really good walks (there is a guide book) but I would recommend Ardnave and the Oa walks but DO NOT no matter what ANYONE else says try the walk from Bunnahabain to the Lighthouse at Ruvaal
If you are interested in birds then Loch Guinart is worth a visit, the RSPB offers weekly guided walks.. rspb.org.uk/events/details.aspx/…
there is a lot more here
islayinfo.com/menu-islay-activities.html/
or just here

Me and a friend of mine are headed for Islay this april. I've been to Scotland a few times, but this will be my first time to the peaty island. I was hoping some of you would share your experiences and give me some tips on what not to miss. The distilleries are a given, of course. :) But what else? Any input is appreciated!
